Today I am sharing a recipe for homemade chocolate larabars. I just kinda made up the recipe today as I went along, and I think they turned out pretty well! Next time you are in need of a quick and easy snack recipe, allow me to suggest you try these out! They are super quick and easy and the consistency *almost* reminds me of cookie dough. : )
Homemade Chocolate Fudge LaraBars
1/2 c nuts (almonds, walnuts, cashews, and pecans are all good choices)
1/2 dates (I actually added a couple cranberries to the half cup to add a tart flavor to the bars)
2 TBS chocolate chips (a little more if desired)
A little less than 1 TBS cocoa powder
A trickle of maple syrup (just to add some moisture and hold the bars together)
1/2 tsp vanilla
1/2 tsp salt, plus more for sprinkling on top
- Put all ingredients in food processor or Vitamix and blend until smooth.
- Press into a loaf pan lined with plastic wrap.
- Sprinkle a little salt onto the bars.
- Place bars into freezer for an hour or into the refrigerator for three hours.
- Cut into bars and enjoy!
Note: I suggest cutting the bars smaller rather than larger. These bars have a quite rich consistency. 🙂

I made these and they were very good. However, I did substitute prunes for dates due to a lack of the latter. Thanks for such a delicious recipe!
